Rhubarb Bars Servings : 1 Categories : Bars 3 cups rhubarb, cut up 1/4 cup water 2 Tablespoons cornstarch 1 1/2 cups sugar 1 teaspoon vanilla 1 1/2 cups oatmeal, quick cooking 1 1/2 cups flour 1 cup sugar, brown 1/2 teaspoon baking soda 1 cup butter Dissolve the cornstarch in the water. Add the rhubarb, white sugar, and vanilla and cook until the rhubarb is tender and thick. Cool somewhat. Mix oatmeal, flour, brown sugar, soda and butter until crumbly (like a fruit crisp topping). Pour 3/4 of the mixture into a 9 x 13 pan. Pour in rhubarb mixture. & sprinkle the remaining crisp mixture on the top. Bake 375 for 30 minutes. Cut bars while still warm. Enjoy
